We just couldn't resist making our own knife. Having seen and handled and sharpened and repaired many many many knives, we knew exactly what we wanted and are thrilled to put it into practice. We've gone for a practical choice of Silver Fox 100 steel and created a slick but incredibly useable knife. Following the success of the first batch, we are back with BATCH TWO. Some tweaks to the shape, we are now really good at the final finish, and, best of all, the price is now very tasty. The workhorse knife you need in your roll.
SHAPE: Petty. One of the smallest knives in a chefs arsenal and good for well small things. We wanted to create a knife that was tall enough to use on a board with a k-tip for extra precision. A decent size contrast with the santoku but not crazy small.
STEEL: Silver Fox 100. One of Sheffield's finest stainless steel, similar in composition to AEBL. It achieves suitable hardness and edge performance, with a grind that tapers to create a cutting edge that is sharpenable without being overly delicate. We wanted a knife that was easy to sharpen, wouldn't rust and which wouldn't be too delicate.
FINISH: Polished
HANDLE: Octagonal mono ebony handle. Chosen for its slick simplicity.
BLADE LENGTH: 115mm.
MAKER: Kitchen Provisions, Sheffield.
BEST FOR: A cracking all rounder taking the best influences from Japanese and Sheffield craftsmanship.
