Gyuto knife, HAP40 powder steel, polished finish - Sukenari

Sukenari hamono were founded in 1933. Throughout Japan they are known for their ability to forge blades of exceptional quality. They have also been real pioneers of forging modern steels.

SHAPE: Gyuto. Literally translates as "cow sword", this is Japan's answer to the western chef knife. 

STEEL: HAP40. This is a semi stainless powder steel manufactured by Hitachi steel. It has high amounts of tungsten, vanadium, molybdenum and cobalt making it a very tough steel. Add to this over 1.2% carbon and we have a steel capable of extreme hardness and edge retention. 

FINISH: Migaki or polished

HANDLE: Octagonal Oak handle with black Buffalo horn ferrule

BLADE LENGTH: 210 and 240mm.

MAKER: Sukenari - Toyama, Japan

BEST FOR: Top of the line knives in crazy steels.

SAUNDERS SAYS: "I have waited a longtime to get knives in from this maker. Now they are here my only complaint is I need more as I want all of them."

These knives are hand-forged so there may be slight variations in measurements and finishes.
